I don't know if you've ever done any sort of grappling before, but there is a very clear difference between drills and "rolls". The grappling that was shown in the video was clearly Danis and Conor drilling and not rolling. He was simply trying to allow Conor repetitions in submissions, reversals, and transitions in order to understand each technique.
It takes time to learn jujitsu, he can't just throw Connor on the mat and start transitioning like crazy. He needs for it to be semi slow, that way he can explain and show him things as Connor is doing it.
